Bien, podr\u00edais preguntarles a cientos de estudiantes hambrientos que en los a\u00f1os cincuenta encontraron en \u00e9l un cari\u00f1oso, simp\u00e1tico y extraordinario hostelero que hac\u00eda bocadillos tan grandes, ricos y baratos que atra\u00eda a las filas de excursionistas, de estudiantes de los colegios y de la universidad. En fin, Quinto ha quitado el hambre a tantos est\u00f3magos y a tantos cerebros, durante generaciones. Despu\u00e9s de los bocadillos, ha abierto una fonda que ha sido una piedra miliar de la restauraci\u00f3n senesa. Probad a buscar en todas las gu\u00edas nacionales e internacionales \u201cDe Quinto al Ceppo\u201d y ver\u00e9is como todos, italianos, alemanes, franceses, ingleses se han dado cuenta de lo que bien que se come gastando poco . Porciones abundantes, alt\u00edsima calidad, precios honestos. \u00bfUn sue\u00f1o? Vivimos todav\u00eda juntos y trabajamos todos aqu\u00ed. Nos hemos dado cuenta de que muchos llegan cansados, comen pero querr\u00edan tambi\u00e9n descansar para volver a salir. Nosotros estamos justo sobre la antigua V\u00eda Francigena . Pensamos que las antiguas posadas ofrec\u00edan comida y descanso. Bien, pues dijimos, \u00a1hag\u00e1moslo nosotros tambi\u00e9n! No un hotel como los muchos que ya hay, ni tampoco una casa rural , porque no somos agricultores., s\u00f3lo una docena de habitaciones sobrias, limpias y acogedoras para hacer que repose quien nos lo pida. De hecho, cada cruce permite llegar a tantos lugares. Pega el sol, sopla una brisa delicada, los campos son rojos por la tierra de Siena. Pensamos que es una buena idea. Llega el fontanero para el desayuno, el m\u00e9dico para una \u201cfettunta\u201d (pan tostado con aceite y ajo), el extranjero para un plato de \u201cpappardelle\u201d ( un tipo de espaguetis largos y anchos) con carne de jabal\u00ed, un grupo de amigos para \u201ccrostini\u201d (pan tostado con una salsa encima) y vino. Llegan y se van , llegan y se van. Esta v\u00eda lo ve desde hace un milenio.
