Bem, voc\u00eas podem perguntar a uma centena de estudantes famintos que nos anos de 1950 encontraram nele um simp\u00e1tico, afetuoso e muito competente &#8220;oste\u201d (aquele que trabalha em uma osteria) que preparava sandu\u00edches t\u00e3o grandes, caprichados e baratos que fazia formar uma fila de jovens do lado de fora da porta, fossem das escolas ou da universidade. Enfim, Quinto matou a fome de muitos est\u00f4magos e c\u00e9rebros durante anos. Depois de trabalhar com sandu\u00edches abriu uma \u201ctratoria\u201d que se tornou uma \u201cpedra fundamental\u201d para todos os restaurantes seneses. Experimentem procurar nos guias italianos ou internacionais \u201cDa Quinto al Ceppo\u201d e notar\u00e3o o quanto todos, italianos, alem\u00e3es, franceses, ingleses, afirmam ter comido bem gastando pouco. Por\u00e7\u00f5es abundantes, alt\u00edssima qualidade, pre\u00e7os honestos. <b>Um sonho? E ainda vivemos juntos e trabalhamos todos aqui. Percebemos que muitos chegam cansados, comem, mas gostariam de repousar um pouquinho antes de partir novamente. Estamos exatamente perto de antiga via \u201cFrancigena\u201d (a qual percorriam os franciscanos). Ent\u00e3o pensamos: as antigas pousadas ofereciam comida e repouso. Pois bem, ofere\u00e7amos isso n\u00f3s tamb\u00e9m! N\u00e3o fa\u00e7amos um hotel, pois j\u00e1 existem tantos, nem agriturismo (n\u00e3o somos agricultores!), fa\u00e7amos apenas uma d\u00fazia de quartos s\u00f3bios, limpos e acolhedores para que aqueles quem necessitem possam descansar. De resto, cada cruzamento permite chegar a tantos lugares. Bate o sol, sopra uma brisa delicada, os campos s\u00e3o vermelhos, da cor da terra de Siena. Imaginamos que seja uma boa ideia. Chega o bombeiro hidr\u00e1ulico para tomar o caf\u00e9 da manh\u00e3, o m\u00e9dico para comer uma \u201cfettunta\u201d, o estrangeiro para comer um prato de \u201cpappardelle al sugo di cinghiale\u201d, um grupo de amigos para comer \u201ccrostini\u201d e vinho. Chegam e se v\u00e3o, chegam e se v\u00e3o. H\u00e1 mil anos essa estrada assiste a esse movimento.
